Barker Ryan Stewart are proud to have assisted the John Singleton Group with conversion of the Princeton wholesale plant nursery into top end foodie destination, Saddles Bakehouse/Eatery/Nursery.
Inspired by its stunning natural setting, the John Singleton Group has delivered a stylish country homestead style restaurant overlooking a scenic farm dam. The bakehouse and eatery are run by successful the restaurateurs Cameron & Hayley Cansdell. Together, they own other Central Coast establishments including Bombini Restaurant at Avoca Beach, and Fish Dining at Point Frederick. Located on the Old Pacific Highway midway between Sydney and the Central Coast, Saddles is destined to be a popular foodie and nursery destination on what is becoming known as the Central Coast Harvest trail.
The John Singleton Group approached Barker Ryan Stewart with the objective of building a restaurant on the wholesale nursery site. However, the local zoning controls did not permit a standalone restaurant. Barker Ryan Stewart’s planners investigated the planning guidelines and identified that restaurants are permissible if they form part of a Garden Centre. From this advice the concept of renewing the Princeton Nursery to a modern Garden Centre with a restaurant and bakehouse was established. Other constraints on the development included the lack of an available sewerage connection and overland flooding issues.
Barker Ryan Stewart’s engineers undertook investigations to provide on-site effluent disposal and a flood impact analysis to capture stormwater flows in the dams that are now a feature of the project.
